1 cup uncooked white rice (not minute rice!)
1 teaspoon butter
2 cloves garlic, minced (I use jarred minced garlic)
1 teaspoon lime zest (I bought my zester at the $ store)
1 can 14-oz chicken broth
1 1/4 cup water
In saucepan combine all above ingredients and bring to a boil. Cover and cook 15-20 minutes, until rice is tender. Do not over cook. Mean while in small bowl combine:
2 Tablespoons freshly squeezed lime juice
2 teaspoons sugar
3 Tablespoon fresh chopped cilantro (I use a food processer)
When rice is done transfer to a serving bowl and combine with cilantro/lime/sugar mix.
This is a great side for any Mexican dish. Enjoy!
